Blackfriars is located in the 12th Century refectory of a Dominican monastery, thus it is the oldest purpose built eating place in the country.</p>

However, in recent years the City Hall has lost its number one spot as a music venue to the Metroradio Arena Newcastle. Located on the banks of the Tyne behind the Central railway station, it is not only the venue for ‘big-name’ music bands, but touring shows and some indoor sports events.</p>
<p style="text-align: justify;">Although strictly speaking in Gateshead, the new Sage, designed by Norman Foster with its distinct chrome and glass curves, has to be mentioned. Sage is now the home of the Northern Sinfonia and is widely used to showcase less well known folk, traditional and community bands/performers.</p>
<p style="text-align: justify;">Smaller theatres include Northern Stage (off Barras Bridge) which houses small regional and touring groups of theatrical and musical performers. Also used for smaller venue/productions are the Live Theatre (Broad Chare) and the Journal Tyne Theatre (Westgate Road).</p>
<p style="text-align: justify;">Newcastle does, of course, have a Carling Academy, which is on Fenkle Street near the city wall. It has a 2000 capacity and plays host to all the ‘usual suspects’ in the touring rock world.</p>
<p style="text-align: justify;">There is no shortage of night-clubs in Newcastle with a range of styles to suit everyone. Top of the list is probably World Headquarters on Carliol Square. The club is actually inside Curtis Mayfield House, which gives a big clue as to the ambience and music played there. “No sponsors, No corporates, No sell-out” is its motto and laid-back, almost to the point of falling over, is its style.</p>
<p style="text-align: justify;">Tuxedo Princess is a floating nightclub off Hillgate Quay. Again, strictly speaking, this is in Gateshead, but it is a very popular venue with its seven bars and seven styles of music. It can be raucous at times and is not for the reclusive or timid visitor. Also, at Hillgate Quay is the Baja Beach Club, known locally as the ‘Badgers’. Palm trees, surfing regalia and barmaids wearing bikinis should give you a picture of what to expect. Revellers here have been known to become “tired and emotional”.</p>
<p style="text-align: justify;">The Foundation in Melbourne Street offers to some a more stylish experience, although others might say that it’s a typical warehouse/loud sound/dazzling lights club. You’ll have to visit it to make up your own mind on that one!  Its ‘specials’ are the Thursday ‘indie’ night and a ‘funky house’ on Saturdays. Huynh&#8217;s a partner there, but his day-to-day involvement is minimal, except perhaps when Tony&#8217;s out of town. And maybe not then, either. <p style="text-align: justify;">Because although Tony conceptualizes the food, he trains cooks to cook. He doesn&#8217;t do it himself.</p>
<p style="text-align: justify;">Bún has a new publicist (Susan Rike), and often with a new publicist comes a new round of press dinners.</p>
<p style="text-align: justify;">Susan&#8217;s press-dinner style is to round up four to eight journalists and bring them all to dinner at once, in a group. She tends to do three such dinners per restaurant.</p>
<p style="text-align: justify;">
<p style="text-align: justify;"><span id="more-789"></span></p>
<p style="text-align: justify;">Group dinners can, of course, be deadly, but there&#8217;s always the off-chance that you&#8217;ll meet someone interesting at them, and I have met a number of interesting people at Susan Rike dinners. She tends to draw an eclectic group.</p>
<p style="text-align: justify;">I already knew (and like) the three other journalists at dinner last night, and so I could focus on getting to know Tony Lam, the Sino-Vietnamese owner, born in Saigon, spending formative years living in and then running refugee camps in Malaysia, and then going to college and becoming a merchant.</p>
<p style="text-align: justify;">Tony kind of reminded me of my former boss and (former) guru Pansak Vinyaratn, who ran the magazine, and later the newspaper, that I worked for in Bangkok. He would wax philosophical about things and discuss them in mercurial ways that made you wonder whether he was really smart, borderline crazy or just messing with you.</p>
<p style="text-align: justify;">But I ended up staying and listening to him talk about his approach to ambient music and his food background until after the other journalists had left, and until after Susan had left.</p>
<p style="text-align: justify;">After dessert of pandan panna cotta (very much like the bay leaf panna cotta I had at Fireside; this might be a trend) and sweet coconut-banana tapioca, he ordered some cuttlefish for me to try.</p>
<p style="text-align: justify;">Tony served us lots of things that weren&#8217;t on the menu, including raw green guava (underripe, the way they like it in Southeast Asia) with dried plum powder. That was sort of an intermezzo after the sweet-and-sour fish, if I remember correctly, which actually came after the lamb chops with eggplant, pear chutney and anise sauce.</p>
<p style="text-align: justify;">Tony also interspersed the menu with drinks, including a couple of flaming shots that we were supposed to drink quickly through straws. The problem with that is that if you&#8217;re not quick about it your drink tastes like melting plastic, but I was quick.</p>
<p style="text-align: justify;">We also had a pretty remarkable Piña Colada flavored with crushed mint, giving it a cooling effect that somehow was in no way minty. In a cocktail that I think he called the Poison Ruby, lychee liqueur was made to taste even more lychee-like with the addition of rosewater.</p>

We all know that Experience, Professional Training, Education is MAJOR-the main categories that tell the industry you have what it takes to play a role. But WHY is it important to have a STRONG skills section?</p>
<p style="text-align: justify;">Many roles from commercials to Movies require some skill or the appearance of a skill, talent, language or artistic ability. It&#8217;s important to let casting directors and your agent know what you can do comfortably.</p>
<p style="text-align: justify;"><strong>Athletic Skills- playing golf, swimming, diving, racing<br />
</strong>Kevin Costner really does play golf and did many of his own shots in <strong>Tin Cup</strong> and the famous Johnny Weissmuller did dive off cliffs and stay underwater a long time in jungle streams for all the Tarzan movies. Paul Newman did drive race cars in a movie as did Jason Statham in <strong>The Transporter</strong>. Many actors do dangerous sports and stunts in their own projects. But for most action adventure movies there are stand-ins. For casting purposes they still need to know that you are relatively in shape and can move, run and do some &#8220;appearing to be dangerous&#8221; stuff. If you DO play golf or tennis bring your clubs and racquet to the audition and dress in your best golf shirt or Wimbledon tennis togs.</p>

<p style="text-align: justify;"><strong>Dialects and Languages</strong><br />
If a film or series is set in a different country or your character is from there, you DO have to sound authentic. Yes, Meryl Streep and Even Robert DeNiro got expert speech coaching for some roles to learn an accent or get rid of one but it&#8217;s great if you&#8217;re already skilled in dialects.</p>
<p style="text-align: justify;"><strong>Musical talent- singing, playing an instrument</strong></p>
<p style="text-align: justify;">Sometimes a character will sing, play the guitar or be in a rock band. Kris Kristofferson sang and played in more than one film and of course Barbara Streisand sang in <strong>Funny Girl</strong>and others. But not everyone remembers that Meryl Streep sang the film&#8217;s theme song, Amazing Grace in <strong>Silkwood.</strong> You might just get hired to sing the theme song or appear within the movie as YOURSELF performing in a cabaret or nightclub.</p>
<p style="text-align: justify;"><strong>World Traveler- can you handle traveling or have a passport?</strong><br />
So many films are shot on location. If you&#8217;ve traveled there you&#8217;ll be familiar with the language, the customs and will certainly have your passport. I&#8217;ve met actors who got smaller roles in adventure films because they had been on safari in Africa, had surfed on the Great Barrier Reef in Australia and climbed the Himalayas.</p>
<p style="text-align: justify;"><strong>Other hobbies or artistic pursuits </strong><strong><br />
</strong>Are you experienced in painting watercolors, sculpting, gardening? These may be part of a character so it&#8217;s more likely you&#8217;ll be called to play them if you ARE a painter, sculptor or have a real garden. You&#8217;ll even have the appropriate paint/mud splattered wardrobe for the audition!</p>
<p style="text-align: justify;"><strong>Degrees in other professions- nursing, medical degree, MBA-business<br />
</strong>These things will help if they need someone on the set of a Soap as an &#8220;advisor&#8221; and to speak the jargon/lingo for Corporate videos and in house training films.</p>
<p style="text-align: justify;"><strong>How skilled must you be REALLY?</strong><br />
Never lie. Be competent but not necessarily professional in your skill or talent. For example if you&#8217;re on a sailboat for a toothpaste commercial you don&#8217;t have to &#8220;crew&#8221; but it might be best if you don&#8217;t get seasick easily, especially in close-ups.</p>
<p style="text-align: justify;">If you have to play the piano for a coffee commercial, be able to do so for at least 8 bars. The whole commercial is only 30 seconds so it&#8217;s not going to be necessary after that. (I know!)</p>
<p style="text-align: justify;">If you state that you are &#8220;conversational or fluid&#8221; in a language that might be sufficient for a 30 second commercial or short scenes in a movie. <strong>Fluent</strong> means you are really up-to-speed.</p>
<p style="text-align: justify;">Any other sport-biking for example, even if the movie is about a 3,500 kilometre bike hike, the <strong>Tour de France, </strong>you&#8217;ll probably have a stand-in. You&#8217;re being hired as an ACTOR not a biker. The extras might have to be better than you or actually be real pro&#8217;s.</p>
<p style="text-align: justify;">If they want a gold medal Olympic athlete for the movie or TV series they&#8217;ll probably hire one or have HIM stand in for your stunts while YOU act. So although you should be &#8220;proficient&#8221; at your sport or skill you don&#8217;t need to be brilliant. Even Ingrid Bergman didn&#8217;t play a note in her Academy Award winning role in <strong>Intermezzo</strong> where she portrayed a concert pianist.</p>
<p style="text-align: justify;">So add all of your talents, skills, sports, languages, dialects and special &#8220;activities&#8221;-ballroom dancing to salsa and you might just double your auditions and bookings!</p>

<p style="text-align: justify;">We non-native Oaxacans have our rules…don’t drive outside the city after dark, never eat fresh unpeeled produce, be cautious feasting on the street or in markets. For me, after less-than-orgasmic culinary experiences, there was “wait ‘til you’re on the coast to eat fish or seafood.”  Thankfully all changed after starting to dine at Veracruz a couple of years ago. For over 10 years owners Leo and Rosita have been serving up some of the best seafood I’ve ever eaten, anywhere.  Perhaps because as native Veracruzanos, mariscos is in their blood. Perhaps because they take pride in their fresh, and exquisitely prepared and seasoned dishes, as is abundantly evident when you see Leo continually seeking assurance from his patrons that all is well.</p>
<p style="text-align: justify;">Located a few kilometers out of Oaxaca proper, Veracruz has a quaint coastal flavor to it, one side simple marine décor and the other a palapa.  I prefer the atmosphere of the beachy palm leaf roof with walls of reed construction, so for this comida we dined in the palapa.</p>

<p style="text-align: justify;">Friendly and attentive staff promptly present an array of complimentary starters foreshadowing the rest of the meal….each dish distinctly flavorful, not too spicy, light, cold when it’s supposed to be, and hot when that’s what you would expect!</p>
<p style="text-align: justify;">Crisp tostadas appear almost as quickly as you are seated, with sides of   green and red salsas and requisite mayonnaise and saltines.  Next a meaty crab leg salad in a light spicy vinaigrette with chopped tomato and green pepper, lime and chile.  Your intermezzo is steaming crab leg and pincer tomato based soup ready to give your teeth and fingers a workout.</p>
<p style="text-align: justify;">We decided against the cocktails (octopus, shrimp, crab, etc) which come in 50 and 90 peso sizes, and the larger meal sized broths and bouillabaisses ranging from 85 to 150, opting for cold seafood platters.  First came the lightly dressed shrimp salad with sliced red onion, lime and habanero chiles, followed by large triangles of sea scallop combined with white onion, chile and orange slices, each of these plates having been prepared with attention to color and flavor combinations.  Finally appeared a tray of still steaming succulent cracked crab pincers over a bed of citrus slices and ice.</p>
<p style="text-align: justify;">Entrees, ranging from 125 pesos, arrive appropriately garnished, together with baskets of sliced oven-fresh baguette style bread.  My wife’s giant split-shell shrimp were served in a chipotle sauce, almost in defiance of the traditional strong flavor of this chile, alongside a healthy dollop of melted Oaxacan string cheese.  Our daughter opted for shrimp in a semi-sweet white wine marinade, with sides of cooked cubed veggies, and undressed mixed salad.  My whole sea bass, Veracruzano style, was served in a savory sauce with tomato, olive, caper, carrot and chile.  The red snapper of Fernando Gonzalez our culinary cohort for this meal, still enveloped in aluminum and extending well beyond the edges of the plate, was baked with pureed green tomato and spices, the steamy aroma of hierba santa filling the air upon the foil being stripped away.</p>
<p style="text-align: justify;">After a feast of such Bacchanalian proportions, which included several copas of the best house mezcal any of us had previously tasted, coffee and dessert were out of the question, although we yielded to temptation and finished off with the sweet Spanish liqueur, “43”, chased with soda over ice.</p>
